
Remember my summer squash entry? Well it's the darndest thing! Asparagus makes a great replacement for the zucchini. Just cook it the same!
When you are choosing asparagus at the grocery store, you want spears that are firm and not wilty. They shouldn't be spotted either. The tips should look like fresh tight flower buds, but not dried out or shrivelled. Once you get it home, place it in a glass of water in your fridge like you would a bunch of flowers. That's all asparagus really is anyway, a bunch of flowers on stems. Tasty flowers on stems. To prepare them, snap off the bottom couple of inches or so to get off the tough part. And remember, with asparagus, girth is not important. Fat ones can be just as tender as the slim ones and vice versa. You've just got to find the freshest ones.
