How 'bout Some Pizza Ya'll?

This pizza was exceptionally delicious! I love the fresh veggies. I'm not giving exact measurements here. The wonderful thing about pizza is you can make as much or as little as you want. I have not yet found a pizza crust recipe that I love, so you're gonna have to come up with that on your own if you want it homemade. But on to better things! I'll give you the ingredients and then you slap them together in whatever fashion makes your heart sing. Ok!

No Dearth Veggie Pizza

You will need:
1 pizza crust or your favorite pizza dough, ready to go (for crust feel free to use tortillas, french bread slices, flat bread, a legitimate pizza crust, or make your own.)
pizza sauce (yes, I bought it)
lightly steamed broccoli (try those microwave steam bags)
oven roasted veggies (if you don't know how to make them, see the roasted carrots recipe and sub in your favorites. I used onions, eggplant, zucchini, yellow squash, and red bell pepper)
low moisture mozzarella cheese
about 2 ounces goat cheese for a big pizza
sliced fresh mushrooms
chopped, seeded roma tomatoes

Steps:
Pre-heat oven to 450 F. Spread ready-to-go crust with sauce. Sprinkle on mozzarella cheese. Then sprinkle on other vegetables, being sure to not overload the pizza. You want all of the veggies to get a tiny bit caramelized and toasty. Sprinkle on goat cheese. Bake for 8-20 minutes depending on how big your pizza is. The one in the picture was a 14" pizza and took about 18 minutes to bake at 450 F.

I have an excellent pizza dough recipe that is super simple and tastes yummy. Pour into a bowl 1 and 3/4 cups warm water, 10 gm yeast (2 packets), 1tsp honey, 1Tbsp olive oil. Mix it around. Add in 1 tsp salt and 5 cups flour. Let it rise for a while...at least 1 hour, but as long as it takes from the time you get distracted with something else until you remember you were making it is fine too. Bake at 350 with whatever toppings you want for about 20 minutes.
